You can try all these ideas

Stir
a spoonful into plain rice, risotto or pasta just before
you serve it. Cant get much simpler
than this one but its good!
Spread
a spoonful onto fish or a chicken fillet and then bake
in the oven. The fish will take ten
to fifteen minutes and the chicken
about twenty-five to thirty minutes.
Mix
a spoonful with crème fraiche for a delicious summer
sauce. Great with cold fish or chicken.
For
a light snack or nibble with drinks, spread the pesto
on a slice of lightly toasted baguette
or ciabatta.
For a taste that belies the simplicity of its preparation,
insert a tablespoon of pesto between
the skin and the meat of a chicken breast. Then roast
gently until thoroughly cooked.
Remove stalk and then place a large flat mushroom, upside
down, on a lightly greased
roasting tin. Spread the surface of the mushroom with
pesto, top with an olive and bake for just ten
minutes to get a wonderful first course. Alternatively,
have as a light supper with fresh bread and salad.
Ever tried stirring pesto into mashed potato? And what
about chunky homebaked chips dipped in
pesto? Sometimes the simplest things are the best!
Prior
to serving, try tossing lightly cooked courgettes or green
beans in pesto. Looks and tastes great.
Always remember to cook chicken
thoroughly!
